【宜蘭爽爽團】煮一鍋海鮮火鍋吧

蔬菜、菇纇、蛤蜊、蝦子和小捲清洗妥當,魚大卸十多塊,辣椒和青蔥切成末,京都漬菜(大根漬和千枚漬)切小塊,芥末擠在一旁,醬油倒一碟,各就各位。

高湯滾燙之前,先品嚐肉質柔嫩的生魚片,朋友從京都攜回的漬菜和我們從伏見扛回的井筒屋伊兵衛純米大吟釀。新鮮的生魚片,甘甜沒話說;京都的漬菜,是讓人嚐過之後,會忍不住讚嘆且不禁著迷的,絕對和印象中死鹹,吃一口要配一碗飯的漬菜大不相同;至於那裝在竹筒內的清酒,有著一股淡淡的竹香,清順爽口。

高湯一沸騰,該下鍋的通通不放過。待再度沸騰,燙得恰到好處的小捲、蝦子和開了口的蛤蜊,可要快速撈起,放老了,便可惜了。至於菇類和蔬菜,就讓他們吸飽了高湯,柔軟了身段之後,再來慢慢品嚐。

一兩輪之後,續加入泡菜,成了口味較重的泡菜鍋。海鮮的滋味,在酸酸的泡菜提引下,更顯甘美了。
